Black Bean Burrito Bowl

INGREDIENTS

  • ½ cup rice
  • 1 avocado
  • 2 Black Bean Veggie Burgers
  • ½ cup shredded lettuce
  • Green onion to taste
  • ¼ cup red onion
  • Juice of 1-2 lime
  • Handful of cherry tomatoes
  • ¼ cup roasted corn
  • Cashew crema:
  • ½ cup raw cashews, soaked in hot water 10-15 minutes (do not skip this step)
  • 1 juice lime
  • 1 tsp lemon juice
  • 1 tsp nutritional yeast
  • Salt and pepper
  • 1/2 cup water
  • Tortilla chips
  • DIRECTIONS

  • Cook the rice according to the package instructions. Once cooked, set it aside.
  • Dice avocado.
  • Prepare the Black Bean Veggie Burger according to the package instructions.
  • Shred the lettuce and thinly slice the green onions and red onions. Cut the cherry tomatoes in half.
  • In a blender or food processor, combine the soaked cashews, lime juice, lemon juice, nutritional yeast, salt, pepper, and water. Blend until smooth and creamy, adjusting the consistency by adding more water if needed. Set aside once finished.
  • Assemble the burrito bowl by dividing the cooked rice between two bowls. Top the rice with the Black Bean Veggie Burger cut into pieces, shredded lettuce, sliced green onions, red onions, cherry tomatoes, roasted corn, and diced avocado.
  • Drizzle the cashew crema sauce over the bowl, using as much as desired.
  • Serve with tortilla chips on the side for added crunch.
