Actual Veggies Portobello Burger with Fig and Onion


  • 1 Actual Veggies burger of your choice
  • 2 Large cap Portobello mushrooms, stems removed
  • 2 Figs sliced
  • ½ Onion sliced
  • 1 Tsp sherry vinegar
  • 2 Tsp olive oil, divided
  • Handful of green leaf lettuce
  • Goats cheese (optional)
  • Store bought chipotle aioli (Sir Kensington preferred)
  • Salt and pepper goodness.

  • Follow the instructions on the package to prepare the Actual Veggies Burger.
  • While the burger cooks, salt the mushroom caps and let rest for 5 minutes.
  • In a large skillet, heat 1 tsp of the olive oil, and add the mushroom. Cook on medium heat for around 4 mins on each side, or until cooked through.
  • To prepare the onions and figs, heat the remaining olive oil in a large skillet and add the onions, and sauté until brown. Then, add the figs in the hot pan with the onions and cook until softened. Add sherry vinegar, and salt and pepper to taste.
  • To assemble, use one Portobello mushroom as a base and put a small amount of aioli on top. Then add the Actual Veggies burger patty, onion and fig mixture, lettuce and goat cheese (optional). Top with second Portobello mushroom. Enjoy!
