Veggie "Poke" Bowl

INGREDIENTS

  • 1 Sweet Potato Veggie Burger
  • 1 Radish
  • ½ avocado
  • ¼ cup white basmati rice
  • 1 small carrot
  • 1/4 cucumber
  • 1 tbsp of pickled red onion
  • Seaweed chips
  • ½ tbsp sesame seeds for garnish
  • ¼ cup edamame
  • 1 small jalapeno, optional
  • Spicy mayo:
  • 2 tbsp vegan mayo
  • ½ - 1 tbsp hot sauce
  • Juice of 1 lime
  • DIRECTIONS

  • Rinse the white basmati rice under cold water. Then, cook the rice according to the package instructions or using your preferred method.
  • Cook the Sweet Potato Veggie Burger according to the package instructions.
  • Cook edamame according to the package instructions.
  • Thinly slice radishes and cucumber, shred the carrot using a grater. Slice the avocado in thin pieces.
  • In a small bowl, combine the mayo, hot sauce (adjust the amount to your desired level of spiciness), and the juice of 1 lime. Mix well until the ingredients are fully incorporated.
  • To assemble the bowl, add your rice as the base and then the rest of the toppings. Cut the Sweet Potato burger in strips.
  • Drizzle the spicy mayo over the ingredients.
  • Sprinkle sesame seeds and crushed seaweed chips on top for garnish.
