Ramen Bun Veggie Burger

INGREDIENTS

  • 1 Sweet Potato Veggie Burger
  • 1 pack of instant ramen
  • 1 flax egg (1 tbsp flaxseed meal mixed with 3 tbsp warm water)
  • Cheese slice
  • 1 tomato slice
  • Sautéed onions
  • Red beet and cabbage sauerkraut (store bought)
  • Pink sauce:
  • 1-2 tbsp ketchup
  • 1-2 tbsp vegan mayo
  • Lemon juice
  • DIRECTIONS

  • Cook the instant ramen noodles (without the seasoning packet).
  • Mix with flax egg and less than half of the seasoning packet and shape into two patties.
  • Fry ramen patties in a non-stick pan until golden brown.
  • Cook the Sweet Potato Veggie Burger on the same pan as the ramen.
  • Place the cheese on top of one of the ramen patties a few minutes before it’s finished.
  • Make pink sauce by mixing ketchup, mayo, and lemon juice.
  • Assemble burger with tomato, sautéed onions, sauerkraut, and pink sauce. Enjoy!
