Rainbow Veggie Sandwich

INGREDIENTS

  • 1 Purple Roots Veggie Burger
  • 2 slices of bread
  • 1/2 avocado
  • 1/4 tomato
  • 1/4 cucumber
  • 2 slices of red onion
  • 1/4 bell pepper
  • 1/4 carrot
  • 2 leaves of butter lettuce
  • 2 tbs hummus
  • 1 radish
  • DIRECTIONS

  • Cook the Purple Roots Veggie Burger according to the package instructions.
  • While the burger is cooking, slice the tomato, cucumber, bell pepper, red onion, avocado and carrots. Cut the butter lettuce into shreds.
  • Take two slices of your favorite bread and spread a generous amount of hummus on each slice.
  • Layer the lettuce on one side, followed by cucumber, avocado, carrots, bell peppers, tomatoes, radishes, Purple Roots burger and red onion.
