Green Goddess Burger Bowl

INGREDIENTS

  • 1 Actual Green burger
  • ⅓ cup edamame
  • 1 cup greens
  • Asparagus, half of bunch
  • ½ of a small jalapeno
  • ¼ cup quinoa
  • ½ of whole cucumber
  • ½ avocado
  • Dressing:
  • ½ avocado
  • 4-5 basil leaves
  • 3 slices jalapeno
  • ¼ cup fresh parsley
  • ¼ cup cilantro
  • 1 garlic clove
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ cup water
  • Salt and pepper, to taste
  • DIRECTIONS

  • Cook the Green Burger according to the package instructions. For best results, thaw if frozen, and then bake at 350 F for about 10 minutes or until it starts to brown.
  • Boil edamame according to the packaging instructions. When done, take out of the shell and toss with salt and pepper.
  • To make the asparagus, rinse and trim the ends and toss with olive oil, salt, and pepper. Bake at 400 f for 8 minutes or until your desired crisp level.
  • Cook the quinoa according to the package instructions.
  • Slice the jalapeno, cucumber, and avocado.
  • Chop up the greens.
  • Make the dressing by adding all ingredients into a blender adding the water slowly as you blend. Blend until creamy.
  • Assemble and enjoy!
